Either way is usually pretty nasty. To make the bear claws in strip (barely) palatable, you have to coat them in mud and put them in you fire’s coals for a slow steam, similar to beggar’s chicken.
For the pastry the filling is usually made with day (or more) old leftover pastry paddled together with (usually imitation) almond extract. Working in a bakery really put me off of these, unless they are from scratch.
